This is the perfect word to describe this cake!! The cake is so delicious, moist, soft and dense packed with fresh, juicy apples making it a perfect treat for your taste buds.

The traditional apple cakes are made with cinnamon and nutmeg. There is a heavenly combination between apple and cinnamon. Your kitchen will be filled with rich aroma when you are baking this cake!!

Normally, apple has a tendency to make any cake moist. Imagine a cake made out of apples!! Extremely mouth-watering, right!! This cake is so soft and moist that it will melt in your mouth.

I have made this cake using wheat flour ( pillsbury atta). You can always substitute it with all-purpose flour. I normally use wheat flour as I do not want to use all-purpose flour much. There is no difference in the cake but definitely wheat flour gives it’s own taste and color to the cake. Same goes with all-purpose flour. Otherwise the recipe is same for both.

One thing to keep in mind is when wheat flour added in a recipe, the cake batter becomes thick and results in a moist, dense cake. This is because wheat flour has high protein content and it absorbs more water. If you feel, you can’t handle with thick batter add 4 tbsp of milk extra.

Coming to the apples, you can slice them in a shape as you wish. The skin can always be removed if you wish to. I wanted it to be with skin on as it is more healthy that way.

I normally like to use oil to bake any cake. Using oil makes a cake moist. As this is a apple cake and apple can make any cake moist, I wanted to try it out with melted butter and it worked very well. Both light brown sugar and dark brown sugar can be used. Baking a cake with brown sugar gives good result.

INGREDIENTS

1 cup= 200 ml.

  • Apple- 3 ( small sized)
  • Egg- 2 ( room temperature)
  • Brown sugar- 1 cup
  • Melted butter- 1/2 cup
  • Milk- 1 cup ( full)
  • Wheat flour/ all- purpose flour- 2 cups
  • Lemon zest- 1 tsp
  • Lemon juice- from half lemon
  • Baking powder- 2 tsp
  • Cinnamon powder- 1 tsp
  • Nutmeg- only a pinch
  • Salt- 1/4th tsp.

PROCEDURE

Throughout the whole process, we are just going to gently combine all the ingredients using a whisk. There is no vigorous beating.

To make lemon zest, grate the skin of lemon. Just grate the outer surface of it to make 1 tsp.

Preheat the oven to 180 degree celsius for 10 to 15 minutes.

Gently combine two eggs in a big bowl using a whisk.
Add brown sugar and combine everything gently with a whisk.
Now add melted butter and combine everything.
Next is the milk. Use thick milk.
Now add lemon zest. Wet ingredients are ready now.
Now add all the dry ingredients( flour, half tsp of cinnamon powder, pinch of nutmeg powder, baking powder and salt) and sieve it before adding.
Whisk everything gently to combine.
Batter is ready now. If you feel the batter is very thick when using wheat flour, you can always dilute it by adding 4 tbsp of milk.
I sliced the apples thin lengthwise. You can chop them as you wish. I used 2 and a half small apples. Crunchy apples work good here.
Squeeze half lemon juice.
Add half tsp of cinnamon powder and mix everything together.

Take a baking pan. Grease all the corners with butter and dust with flour. You can also use wax paper.
Add half of cake batter.
Arrange a layer of apples on top.
Cover it with remaining half batter.
Again cover it with apples on top. You can decorate it as you wish.
Keep it in a preheated oven and bake it at 200 degree celsius for 40 to 45 minutes till it is cooked completely. Toothpick inserted in the center of the cake should come out clean.
Once out from the oven. It is cooked completely. Move the cake to a cooling rack and let it cool.

TIPS

  • Both all-purpose flour and wheat flour can be used.
  • You can substitute melted butter with oil.
  • Sour cream can be used in place of milk.
  • Use brown sugar for moist cakes.
  • You can always use any other essence instead of lemon zest but lemon juice is a must as it prevent apple from browning.
