Baked Bacon and Vegetable Muffin Cups

We all like these cups!! Something very different, healthy and tasty at the same time which requires very less time for preparation.

Normally I make these cups for breakfast. Once I made them and carried to my friend’s place for a starter dish. They all liked it and it was a big hit!! It is very handy too.

You can make this dish as you like and with what all ingredients( vegetables) you have at home which can be cooked in 15 to 20 minutes. I have used bacon for this recipe.

Bacon is the meat from the backside or sides of a pork. Bacon tastes very good with egg and vegetables. Use sliced small pieces of bacon.

Eggs are used for binding and it is very healthy to begin the day with. I have used the white portion of the egg. You can use the whole egg with yellow part too.

If you are bored of eating the sandwiches daily, these bacon and vegetable muffin cups are the best substitute!!

INGREDIENTS

  • Egg whites- 8
  • Onion- half ( finely chopped)
  • Broccoli- 2 to 3 florets ( chopped to small pieces)
  • Mushroom- 2 to 3 ( finely sliced)
  • Tomato- half ( finely chopped)
  • Spinach- handful ( finely chopped)
  • Cheese- as needed (optional)
  • Red chilli flakes- 1 tsp
  • Black pepper- 1/2 tsp
  • Mixed Italian Herbs- 1 tsp
  • Salt- as needed.

PROCEDURE

I will show you the brief picture of how I arranged my muffin tray.

Preheat the oven at 180 degree Celsius for 10 to 15 minutes.

Keep the muffin tray ready. Preheat the oven to 180 degrees.
You can stuff each muffin cups as you wish. I have left some cups only for vegetables while I have mixed bacon and vegetables in others.
Now sprinkle the spices on each cups.
Stuff them with cheese. I have left some cups without cheese too.
Mix the egg white with needed salt. Bacon will have salt in it. So add it as required. Distribute egg white in each muffin cup.
Ready.
This is completely optional. You can cover each muffin cup with sliced cheese.
Keep the tray in a pre-heated oven and bake it for
15 to 20 minutes at 180 degrees.
Out from the oven. Cool it for 5 minutes.
Ready.

TIPS

  • Any vegetables of your choice can be used.
