Bittergourd Soup

Bittergourd also called as Bittermelon has it own acquired taste. Either we love it’s taste or hate it!! This recipe is for all bittergourd lover’s and health freaks❤

This soup is not that bitter as I have mentioned a way to remove the bitterness from bittergourd. I have added other vegetables too so that the final soup will have the taste of each vegetable used.

Bittergourd soup helps to maintain blood sugar level, to lower bad cholesterol, for good glowing skin and hair, helps in weight loss, boosts immune system, great for eyes etc.., It is really healthy; very good for diabetes patients!!

The quantity of bittergourd used can be increased or decreased as per your wish. Same applies for other vegetables used too. Any vegetable of your choice can be used.

I have prepared this soup using vegetable broth. Vegetable broth can be prepared a day before or just before making soup. Using vegetable broth increase the taste and nutritional value of soup though it can be prepared in water too.

I have attached the link of homemade vegetable broth recipe. I haven’t used mushroom to make the vegetable broth as I didn’t want the liquid colour to change much.

These soups taste good themselves or a slice of rug bread, brown bread can be dipped into it.

INGREDIENTS

The below quantity can serve 3 people.

  • Bittergourd- 3 small
  • Vegetable broth- 5 cups ( 1 lt.)
  • Onion- 1 medium( diced)
  • Tomato- 1 small ( diced)
  • Carrot – 1
  • Sweet corn- 1/4th cup
  • Garlic – 2 to 3 cloves ( finely chopped)
  • Black pepper – 1/4th tsp
  • Salt- as needed.

PROCEDURE

Clean the vegetables well. Peel the skin of carrot and onion. Dice onion, tomato. Cut bittergourd into squares and carrots slightly in rectangle shape.

Take 3 small size bittergourds.
Cut them into half lengthwise.
Remove the inner seed from them.
Cut them into squares. Add excess salt to it. Rub bittergourd well with salt. Leave it for 30 minutes.
This method removes the bitterness from bittergourd to an extent. After 30 minutes, clean the bittergourd well with water many times to remove the salt.
Take bittergourd, onion, tomato, carrot, sweet corn, garlic cloves in a big bowl. Pour 5 cups of vegetable broth to it. Add required salt to it. Bring it to boil.
Once boiled, keep the flame in low. Now cover with a lid and cook for 30 to 40 minutes in very low flame till everything gets cooked completely. I cooked for 30 minutes.
After 30 minutes, opening the lid. Switch off the flame.
Sprinkle some pepper on top.
Ready.

TIPS

  • You can always make changes to the soup by deciding your own quantity of bittergourd and the other vegetables used. Use vegetables of your choice.
  • If you didn’t want to use vegetable broth for preparing soup, use equal amount of water to prepare it. Vegetable broth gives better taste and it is nutritious.
