Chicken Mayo Sandwich

One of the best sandwiches that taste delicious and takes less than 10 minutes for preparation with very less ingredients is chicken mayo sandwich. It is also my favourite🥪❤

This sandwich is very famous in South Africa. Mostly all the cafes would have it. If we are travelling and if we had to take something handy, then this would be my first choice. They make it really yum!!

It can be made with both white bread and brown bread. I have used brown bread. Mayonnaise sauce can be bought from shop. If you can’t have egg-based one, go for eggless mayonnaise sauce.

I have used 2 tbsp of grated carrot. It can be replaced with finely chopped lettuce leaves  if you have. Once the chicken is boiled, the rest process is very quick.

Best take-away sandwich for a picnic or for a travel, best breakfast or an evening snack that can be made with very less effort which is yum and quite filling!!

The below quantity can make 4 sandwiches.

  • Chicken breast ( boneless)- 1 ( 210 gms.)
  • Bread slices- 8
  • Grated Carrot- 2 tbsp
  • Mayonnaise sauce- 4 tbsp
  • Pepper powder- as needed
  • Salt- as needed
  • Butter- as needed ( for spreading and toasting)


Both boneless chicken and chicken with bones can be used. If using chicken with bones, after boiling remove the bones. I have used boneless chicken breast piece. Any portion of chicken can be used.

Clean the chicken well. Boil it with pepper powder and salt by adding needed water. Cook till it is boiled. Cover it with a lid and cook.
It is cooked completely. Let it cool to normal room temperature. If you have used chicken with bones in it, remove it first.
Start shredding the chicken with two forks. One fork holding the chicken and the other one shredding it. Even the hands can be used. But shred it to very small.
Shredded completely. If it’s still big, use hands and shred further.
Move it to a bowl and add grated carrot, mayonnaise sauce.  Sprinkle needed pepper powder and salt. Mix everything together with a spoon.
The stuffing is ready.
Take two bread slices. Spread butter on one side of both the breads.
Now keep 1 and a half tbsp of the stuffing in one slice. Decide the quantity of stuffing as per your need.
Spread it evenly on one slice.
Close it with the other slice.
It can be cut diagonally and served. The corners can be removed and it is good to taste without toasting too.
No toasting sandwich. If you want to toast, proceed further.
It can be toasted in sandwich maker. If you do not have one, take a pan.Heat 1 tbsp of butter.
Keep the sandwich and heat in a low to medium flame till it gets golden brown on both sides. Do not burn.
Both sides should get golden brown.
I have shown both the toasted and the one without toast.
