Chinese Pork Fried Rice

Fried rice is nothing but a stir-fried cooked rice in a wok, large pan or in a skillet and is usually mixed with ingredients such as eggs, vegetables, seafood or meat.

Today let us check the recipe of fried rice done with pork in Chinese style of making. Pork fried rice is my favourite❤ Whenever I go to any Chinese restaurants or get a take away from there, I just order pork fried rice first.

Go for a good quality pork and we get the best here in Denmark. Remove the excess fat portion from the pork. We are going to start by sauting the pork separate first with soy and tomato sauce which gives it a good color. Go for Chinese soy sauce for good flavor.

I have used long grain jasmine rice for this recipe. Mostly all the Chinese restaurants use jasmine rice. It adds good flavor to the dish. I have used the rice from the previous day. Though rice cooked on the same day can be used, previous day cooked rice gives best result. You can also use basmati rice if you do not have jasmine rice.

Pork fried rice is very simple to make and it takes very less time. This recipe gives you the restaurant-style of making it. The left out can be stored in refrigerator and reheated the next day too.

INGREDIENTS

1 cup= 200 ml.


  • Pork- 300 gms. ( diced)
  • Cooked Jasmine Rice- 4 cups
  • Eggs- 3
  • Onion- 1 medium sized ( diced)
  • Carrot- 1/4th cup
  • Green peas- 1/4th cup
  • Garlic- 4 cloves ( finely chopped)
  • Soy Sauce- 4 tbsp
  • Tomato sauce- 1 tbsp
  • Spring onion- 3 scallions ( finely chopped)
  • Pepper powder- 1/4th tsp plus a little.
  • Sesame oil- 1 tbsp
  • Salt- as needed.

PROCEDURE

Keep all the ingredients ready before starting. Once pork is ready, next steps take less time. So keep everything ready chopped.

Heat little oil in a pan. Add the diced pork pieces.
Add tomato sauce.
Add 1 tbsp of soy sauce now.
Sprinkle little pepper and salt. Saute it together with sauce till sauce thickens and pork gets cooked.


Drain the excess oil. By cooking this way, pork gets good color. The pork is ready now.
Gently whisk three eggs in bowl and keep it ready.
Heat 2 tbsp of vegetable oil in a wok or large pan or in a skillet. Add finely chopped garlic. We add it first to infuse the flavor of garlic in oil. Let the garlic turn golden.
Once the chopped garlic turns golden, add the diced onions. Saute till onions turn soft.
Once onions are soft, add chopped carrot and green peas. Saute for a minute.
Then add the cooked pork pieces. Saute everything together.
Now move everything to one portion of the pan or wok.
Pour the whisked egg now. Keep the flame in low to medium. Wait for the egg to settle itself. Do not stir it. Prepare like making an omelette. It will get cooked from bottom to top.
Once the egg is settled, wait for the egg to get cooked to three-fourth on top.
Stir it now. By this way, you will get big scrambled egg pieces as you get in restaurant. I learnt this way after making it many times at home. Gives best result.
Mix everything together. Check for salt. Add only if needed.
Now start adding the pre-cooked rice.
Add four cups of rice. Mix everything together. Let the rice get stir- fried along with pork and veggies for 1 minute.
Keep the flame in low . Now add the spring onions.
Now add 3 tbsp of soy sauce.
Sprinkle 1/4th tsp of pepper powder and mix everything together . Switch off the flame.
Add 1 tbsp of sesame oil now. Add it after switching off the flame. By this way, the flavor from sesame oil comes out.

  • Use chinese soy sauce for good flavor and result.
  • Go through all the instructions and explanations carefully from the beginning.
