Coconut Macaroons (No egg)

Crunchy outside and soft, chewy in the middle, these coconut macaroons will turn to be a big hit in your family. My kids loved them😊 These macaroons originated from Italy and this is going to be an eggless recipe!!

Coconut Macaroons are easy to make at home with just 4 ingredients and it can be made in under 30 minutes with very less effort.

All you need is unsweetened desiccated coconut, sweetened condensed milk, vanilla essence and almond essence. There is no vigorous whisking in this recipe. Just combining everything together with a spoon and baking them is enough. Quite simple, right?

These macaroons can be prepared in all parties and when you get unexpected guests at home. To decorate these macaroons on top, cherries, grated nuts, chocolate sauce or strawberry syrup can be used.

INGREDIENTS

  • Unsweetened Desiccated coconut- 250 gms.
  • Sweetened condensed milk- 350 gms.
  • Vanilla essence- 1 tsp
  • Almond essence- 1 tsp

PROCEDURE

Preheat the oven to 150 degree Celsius for 10 to 15 minutes.

Take the unsweetened desiccated coconut in a bowl.
Then add the condensed milk. Add the condensed milk little-by-little so that the desiccated coconut gets coated with it.
Add 1 tsp of vanilla essence and almond essence.
Add the rest condensed milk and mix everything well with a spoon.
Mixed well.
Place a baking paper on a baking tray. Scoop the mix of desiccated coconut and condensed milk using an ice cream scoop and place it on the tray.
You can also roll it as balls inbetween your hands.
Push the ball in the center using your finger. If your are decorating the macaroons using cherry or dry fruits, place them in the center of the depression created on them and bake.
Keep it in the preheated oven and bake it for 10 to 12 minutes in 180 degree Celsius till it is golden on the top and base gets firm& dark golden.
Out from the oven. Let it stand in the baking tray for 2 to 3 minutes and then transfer it to the cooling rack and cool it down completely.

If you are decorating using chocolate sauce, melt the chocolate in a microwave-safe bowl or in a saucepan carefully and fill each depression. You can also dip the macaroons in the chocolate sauce.
Refrigerate them for 30 minutes till the chocolate gets set completely.
Ready.
