Egg Mushroom Parcel

These egg mushroom parcels are something a little special!! They are very healthy and tasty that you would make these parcels again and again.

Egg and mushroom are perfect for any day’s breakfast and could meet the nutrition to begin the day with.

Combined with sauce, they taste very good . Since it is wrapped with egg, it is something new and we are not going to use any cream or cheese in this recipe.

This goes well with coffee or tea and with any kind of sauce. But it tastes delicious just by itself.

It requires very less ingredients and even bachelor’s or begginer’s cooking is made easy by this recipe.

INGREDIENTS

The below quantity can make 4 parcels.

  • Grated mushroom- 1 cup
  • Onion- 3/4th cup ( 1 medium sized finely chopped)
  • Garlic- 1 and a half tbsp( finely chopped)
  • Spring onion- 1 ( optional, finely chopped)
  • Eggs – 4
  • Soya sauce – 1 tbsp
  • Tomato ketchup- 1 and a half to 2 tbsp
  • Pepper- 1 tsp
  • Salt- as needed.

PROCEDURE

Grate 7 to 8 mushrooms to make it 1 cup. I used food processor. You can chop it very fine too.

Mix soya sauce, tomato ketchup, pepper to one paste. This is the combined sauce we are going to use for this recipe.
Heat some olive oil in a pan and add the finely sliced garlic pieces. Saute till it becomes orange in colour but don’t burn it.
Now add the finely sliced onions and saute till it gets translucent.
Now add mushroom and saute it for 2 min along with onion and add spring onion. Saute for 1 more minute and add salt.
Now add the combined sauce and cook everything till it is combined well with vegetables.
Stuffing is ready.
Add little water to the egg and whisk it. Addition of little water will make the eggs fluffier. 2 tbsp of water can be added for 4 eggs.

Divide the egg mixture to the number of parcels you are making. Heat the pan and turn the flame to low. Add olive oil and pour the little portion of egg now. Spread it to corners evenly without any gap. Cook in low flame so that it gets cooked evenly. Normally eggs get cooked fast.
Once the surface gets dry, keep some mushroom stuffing ( 2 to 3 tbsp) on it, in low flame. Remember that the quantity of stuffing used each time depends on the size of the egg spreaded because we are going to cover it as parcel. Follow the pictures on how to make the parcel. 4 parcels can be made when you use 4 eggs. Repeat the process each time.






The whole parcel is made in low flame. If you can reverse it carefully, you can. Otherwise the egg parcel can be removed from the pan.






TIPS

  • The whole egg cooking process should be done in low flame.
  • Spring onions are optional.
  • When you make an omlette, add little water to it to make fluffier eggs and it gets spreaded easily.
