Hot Hot Eggless Pancakes and Blueberry Eggless Pancakes

Pancakes are the favourite breakfast to many people. Iam no exception- I love making and eating pancakes❤

After making many egg pancakes, I wanted to make eggless pancakes one morning and this recipe came out very good. When tried this recipe, there is no need for the other one!!

This recipe needs very less ingredients and can be made in less than 10 minutes. It is as easier as using a pre-made pancake mix. The batter in this recipe is thick and it makes thicker and fluffier pancakes.

I have added blueberry to the basic pancake recipe and made some blueberry eggless pancakes too… I have to mention here that it is a perfect combination.

I have used baking soda along with buttermilk. When these two are used together in a recipe, the outcome result will be fluffy.

This pancake tastes very good when served hot. These pancakes are not sweet and definitely will require powdered sugar, maple syrup, honey, jam, chocolate syrup etc..,

Now time for the fluffier and delicious eggless pancakes.

INGREDIENTS

The below quantity makes 14 small pancakes

  • All-purpose flour- 2 cups
  • Buttermilk- 2 and 1/4th cups
  • Sugar- 2 tbsp
  • Baking soda- 1 tsp
  • Salt- 1/4th tsp
  • Blueberry- 1 cup

PROCEDURE

Mix all the dry ingredients together in a big bowl.
Stir it with a whisk together.
Now add buttermilk.
Mix them with a whisk.
Batter is now ready. Rest for 4 to 5 minutes.
Heat 1 tsp of butter in an iron griddle or in a non-stick pan. I have used iron griddle. Once the griddle is hot, turn the flame to low.
Add 1/3rd scoop of batter using a ladle on a griddle. Make three small pancakes.
It is ready to flip the other side once bubbles are visible on the surface and the corners become dry. This takes about 2 minutes.
Wait for the other side to get cooked. This takes 1 minute. You could see, they are fluffy.

4 fluffy pancakes.
Add blueberry to the rest batter and mix it.
Now make 3 blueberry pancakes.
Repeat the same process.

Blueberry pancakes.
With maple syrup on top.

TIPS

  • Bananas can be used instead of blueberries too.
  • Keep the flame in low for cooking pancakes.
  • The first pancake is normally not good because the griddle or pan takes time to adjust the temperature.
