Oatmeal Pancake

Oats are my favourite. It is full of fiber and protein. It helps to maintain healthy skin and in weight reduction. They can improve blood sugar control and help to lower cholesterol.

Above all, it is very stomach filling. Eating filling foods in the morning helps to reduce the intake of calories the rest of the day. Other than Oatmeal porridge and Oatmeal muesli, Oatmeal pancakes are the best idea for busy mornings.

I make pancakes atleast once or twice in a week. So I had to come up with new new varieties in pancakes and these oatmeal one’s are so easy to make with very less ingredients and with easy steps. It is also very fluffy and tastes delicious.

One can use maple syrup, chocolate syrup or sauce, caramel syrup or sauce, apple sauce as topping for any pancakes. Even sprinkled sugar on top, nutella or a scoop of ice cream can be used as toppings.

INGREDIENTS

The below measurement makes 7 to 8 pancakes.

  • Oats- 1 cup
  • All-purpose flour- 1 cup
  • Sugar- 2 tbsp
  • Buttermilk- 1 and a half cup
  • Vegetable oil- 4 tbsp
  • Eggs- 2
  • Baking powder- 2 tsp
  • Baking soda- 1 tsp
  • Salt- 1/2 tsp
  • Vanilla essence- 1 tsp.

PROCEDURE

This pancake requires no time to make. It can be made in food processor, blender or in a mixer.

Take all the dry ingredients( oats, flour,baking powder, baking soda,salt, sugar) in a mixer and give one grind
Add all the wet ingredients(egg, oil, buttermilk, vanilla essence) to the dry ingredients and blend them in a mixer till smooth.
Transfer into a bowl. Don’t worry about small lumps.
Heat an iron cast or a non- stick pan and reduce the flame to medium. Add butter on top. Grease with butter inbetween every pancakes.
Add a scoop of batter now and let it cook in low to medium flame. Bubbles are formed in the edges when it is ready to be flipped the other side. Flipping the other side should be done with care.
It should be cooked brown on both the sides.
It is fluffy in the centre.

Served with maple syrup.

TIPS

  • Normally the first pancake is not good because the iron cast or non-stick pan has to adjust to right temperature.
  • Cook in low to medium flame.
