Eggs are the best way to begin the day with along with a cup of coffee or tea!! This egg-based dish can be taken as a snack too!!
Adding potatoes and mushroom to the protein rich eggs- a combination that makes it a complete meal with full of nutrients.
Potatoes are rich in carbohydrates which is an ideal way for refuelling muscles and are also a good source of fiber, Vitamin C, magnesium and potassium etc..,
Mushrooms are rich in antioxidants which help to prevent many kinds of cancer. In addition to this, they are the good source of folic acids and the dietary fiber in them helps to manage type 2 diabetes.
With so many health benefits, adding them all together with egg for breakfast in the morning makes it a ‘super meal’!!

INGREDIENTS
The below quantity makes 5 to 6 big slices.

- Eggs- 5 big
- Potatoes- 2 medium sized ( sliced thin)
- Mushroom- 5 ( sliced finely lengthwise)
- Onion- 1/2 big(sliced finely lengthwise)
- Tomato- 1 big ( sliced as circles)
- Spinach- handful ( chopped finely)
- Red chilli flakes- 1 tsp
- Chat masala- 1 tsp
- Salt- as needed.
PROCEDURE
Clean the potatoes, mushrooms and spinach well. Normally I don’t peel the skin from the potatoes. If you prefer to peel the skin, peel the skin first. Cut them into thin circles and slit in the center. Slice the mushrooms thin lengthwise and chop the spinach.























TIPS
- Cooking should be done in low flame.
- Using non-stick pan gives good result.
