Pumpkin Muffin

These muffins are loaded with pumpkin puree and tasty pumpkin spices which has lots of fall flavors!! One among the special recipes during fall!!

If you have kids like me, who wants you to try every other pumpkin recipe, this pumpkin muffin is for you. Yes, I started with pumpkin soup, then tried pumpkin pie and came to these pumpkin muffins with streusel topping on top which makes it special for Halloween. Yes, it is a Halloween special recipe๐ŸŽƒ๐ŸŽƒ

When you bake these muffins, I would definitely bet that your whole house will smell amazing!! Most flavor comes from the pumpkin spices- cinnamon, ginger and nutmeg, not the pumpkin. And this will be a big hit with whoever  you choose to share it with. My neighbours liked them a lot๐Ÿ˜Š

You can buy the pumpkin puree can from shop or it can be made at home too. I have shown two methods to make puree out of pumpkin.

Perfect for breakfast or as a snack anytime which is very healthy and tasty at the same time. This recipe can be tried with both all-purpose flour/ wheat flour.

INGREDIENTS

1 cup= 200 ml.

  • Pumpkin puree- 2 cups
  • Flour- 2 cups
  • Egg- 3
  • Oil- 3/4th cup
  • Milk- 1/4th cup
  • White sugar- 1/2 cup
  • Brown sugar- 1/2 cup
  • Vanilla essence- 1 tsp
  • Cinnamon powder- 1 tsp
  • Ground ginger powder- 1/2 tsp
  • Ground nutmeg powder- 1/4th tsp
  • Baking powder- 1 tsp
  • Salt- 1/4th tsp.

Streusel topping:

  • Handful of walnuts
  • Needed sugar ( I used dark brown sugar).

PROCEDURE

To make pumpkin puree

Peel the skin of pumpkin. Remove the inner seeds. Dice it into small pieces for stove top. Cut into 4 to 6 slices for grilling in oven.

1. Stove top:

1. Peel the skin of pumpkin, remove the seeds,dice it into small pieces. Heat 2 tbsp of oil in a pan. Add the diced pieces. Keep the flame in medium. 2. Cook till it turns soft and cooked completely. Stir now and then inbetween. 3. Cool down completely and move it to a mixer jar. 4. Blend till smooth. 5. Pumpkin puree is ready.

2. Oven:

1. Cut the pumpkin into half, remove the seeds, dice it into large, equal pieces. Place it on a baking tray. Sprinkle some oil on top. 2. Place it in a preheated oven and bake till it’s cooked completely. 3. Once it is cooked completely, take it out from the oven. Let it come to normal room temperature. 4. Peel the skin from pumpkin. 5. Move the pumpkin into the bowl. Mash it to smooth with a backside of spoon or in a blender/ mixer. 6. Pumpkin Puree is ready.

To make muffins:

Preheat the oven to 180 degree celsius for 10 to 15 minutes.

Throughout the process, gentle whisking till combined is enough. No need vigorous whisking.

Whisk three eggs in a big bowl till combined.
Add both white sugar and brown sugar. Whisk gently till combined.
Add the oil now and combine it using whisk.
Next is milk and add 1 tsp of vanilla essence.
Add the pumpkin puree now. Mix everything together.
Wet ingredients are ready now.
Now sieve all the dry ingredients- all-purpose flour, baking powder, cinnamon powder, ground ginger, ground nutmeg, salt.
Combine everything together.
Batter is now ready.
Now prepare the streusel topping- I mixed the walnuts with sugar to coarse in mixer/ blender. You can always chop walnuts to small and mix it with sugar.
Fill each muffin mould to three-fourth.
Place the streusel topping on top. Be generous with it.
Keep it in a preheated oven and bake it at 180 degree celsius for 15 to 20 minutes till it is cooked completely.
After it is cooked completely, place it out from oven. Let it come to normal temperature in a cooling rack.

TIPS

  • Both store-bought pumpkin puree can or homemade pumpkin puree can be used.
  • Baking time varies from oven to oven.
  • Any nuts of your choice can be used for streusel topping.
  • Both all-purpose flour or wheat flour can be used.
