Pumpkin Soup

Pumpkin soup is a thick soup made using the flesh of pumpkin and is cooked in vegetable broth/stock. It is usually served hot or cold and is a popular Thanksgiving dish in United States, European Countries and Australia.

Pumpkin soup is very popular during fall in the month of  September, October when you get pumpkin in surplus and this is one among the Halloween dish.

Pumpkin is highly nutritious which is rich in Vitamin A, antioxidants and packed with vitamins that boost immunity. It is rich in fiber which slows down digestion and helps in weight loss by keeping you feel fuller longer.

Pumpkin soup is very safe for infants when they start teething as it helps them to develop a strong immune system.

Above all, it is very easy to cook at home with very less ingredients and less effort. You will have a bowl of soup for dinner which keeps you full for long time.

INGREDIENTS

1 cup= 200 ml.

  • Pumpkin- tightly packed 4 cups
  • Vegetable broth– 4 to 5 cups
  • Onion- 1, sliced thin
  • Garlic- 3 cloves, sliced
  • Pepper- 1/2 tsp plus a little
  • Salt- as needed
  • Fresh cream- 1 tbsp per bowl.

PROCEDURE

To make the vegetable broth, refer to the recipe attached. I avoided mushroom in the recipe for the broth to get a plain color. It can be prepared a day before or just before the soup.

Peel the skin of pumpkin and remove the inner flesh.
Slice it down to pieces.
I packed 4 cups tight with pumpkin pieces.
Heat 2 tbsp of olive oil in a pot or pan. Add the sliced onions.
Once the onions turn translucent, add garlic cloves. Saute for 2 minutes.
Add the pumpkin pieces now.
Add the pepper and salt. Saute for 2 minutes.

Now add 4 to 5 cups of vegetable broth. Pumpkin soup is normally a thick soup. I added 5 cups.
Let it come to boil. Then simmer it and cook for 15 to 20 minutes till the pumpkin is cooked completely.

After 15 to 20 minutes, pumpkin is cooked completely. Switch off the flame.
It is cooked completely.
Cool it down completely.
Once cooled, move it to a blender jar or use a hand blender to blend to smooth.
Blended to smooth.
See the smooth, creamy consistency. Ready.
Sprinkle some pepper and salt on top. Add 1 tbsp of fresh cream on top.

TIPS

  • Pumpkin soup is a thick soup. Adjust the liquid consistency as per your taste.
  • If you want to skip the fresh cream, you can as the soup is itself creamy.
