Strawberry Wheat flour Cake

Strawberries are soft, sweet, juicy, bright red berries. A cake out of it is simply delicious and nutritious!!

Since Iam from Thoothukudi near to Tirunelveli, Iam grown up by eating bakery foods. So I bake a lot now. We are definitely cake lover’s!! Sometimes I can’t wait for the cake to cool down. This is one such recipe!!

Regarding Strawberry Cake, my daughter always prefers cakes made out of fruits. So she was after me for this cake. And she gave the idea too!!

I have used my basic, simple vanilla cake recipe along with strawberries just I have used sour cream instead of milk. Sour cream gives soft, moist cakes. If you don’t have sour cream, replace with plain Greek Yougurt or Plain thick Natural Yougurt. It gives the same result.

Normally I don’t bake with all-purpose flour. I always use wheat flour and I use only brown sugar for baking. But you can use all-purpose flour and white sugar too.

This recipe is very easy to bake and it requires very less ingredients. It was completely baked by my daughter and I had to ask her to move everytime when I had to click pictures. But the cleaning part was done by me.

This cake is very sweet, juicy to eat . Lemon Zest, I have used along with strawberries gives a very rich aroma. You can replace it with vanilla essence too.

This cake is best for Valentine’s day , anniversary day ,your spouse birthday or any other intimate days. But always there is no reason required when it comes to bake a cake!! So let’s bake it!!

Please go through the step by step process.

INGREDIENTS

1 cup= 200 ml.

  • Strawberry- 1 box ( I used everything)
  • Eggs- 2 ( in normal room temperature)
  • Wheat flour- 2 cups
  • Sour cream- 1 cup
  • Brown sugar- 1 cup
  • Vegetable oil- 3/4th cup
  • Baking powder- 2 tsp
  • Salt- 1/4th tsp
  • Lemon zest/ Vanilla essence- 1 tsp ( Grate the skin of lemon)

PROCEDURE

This recipe does not require overmixing. Just we are going to whisk everything till it combines.

Powder the sugar in a mixer.

Grate the skin of lemon to make the lemon zest.

I have used cake beater to make this cake and I used it in low speed. It can be whisked with hands too. Take a big bowl, add two eggs and combine it with 1 cup of powdered sugar. If you are using the hand to whisk, just beat two eggs till it combines and then add 1 cup of powdered sugar.
Once it is combined, add the sour cream and beat it in low speed or with hands till everything is mixed together.
Then add the oil and mix it. Wet ingredient is now ready.
Now sieve the one cup of flour and mix it with wet ingredients.
Now sift the remaining one cup of flour, baking powder and salt. Add everything together and mix them in low speed or with hand.
Add the lemon zest too. Mix everything in low speed till combined with cake beater or with hand. There should be no lumps.
Now the batter is ready. I have sliced the strawberries lengthwise. You can slice as per your wish. Preheat the oven to 200 degree Celsius for 10 minutes.
Taking a baking tin. Cover the bottom with baking paper and grease the edges with butter and little flour.
Pour half of the batter and leave the rest.
Spread the half batter to cover the bottom.
Now place half of the strawberries and cover with the remaining batter.
Keep the rest of strawberries on top. You can decorate as you wish.
Now keep it in the preheated oven and keep the temperature in 180 to 200 degree celsius. Bake it for almost 40 to 45 minutes. Check once inbetween.
Use a toothpick in the center of the cake to check if it’s cooked properly. Let it cool for sometime.
Once it is cooled, sift some powdered sugar (some extra sugar) on top. This is optional. The cake tastes very good without this too.

You could smell the aroma of strawberry along with lemon zest and the cake tastes too good.

TIPS

  • Sour cream can be replaced by Plain Greek Yougurt or Plain thick Yougurt.
  • The whole process is to combine everything. So pls don’t overbeat or overmix .
  • If using cake beater, use it in low speed.
  • Vanilla essence can be used instead of lemon zest too.
  • If you don’t prefer wheat flour and brown sugar, pls go ahead with all-purpose flour and white sugar.
